- Duty: ‘Create schedules.’ Resume: ‘Built weekly schedules that held kitchen labor near 31% of sales.’
- Duty: ‘Train new hires.’ Resume: ‘Onboarded 9 cooks with a station checklist, cutting time to solo service from 3 weeks to 10 days.’

If you do not know a figure, estimate honestly or describe scope: ‘Ran the pass for 220-cover Saturday service’. A named scale is better than a vague claim.
Sous chef job description for resume use
When you build the resume from a sous chef job description, mirror its exact verbs and nouns where they are true. If the posting asks for ‘inventory management’, ‘scheduling’ and ‘menu development’, those three phrases should appear in your bullets or skills block. This matters for applicant tracking systems and for the hiring chef scanning for a match. Do not paste the whole description. Choose the five duties you have done most and write one strong bullet for each, then add two that show something the posting did not ask for, such as a cost win or a training system.
Also keep the venue context visible: seats, covers, meal periods and cuisine. ‘Sous chef’ means something different in a 60-seat bistro, a 400-cover hotel banquet kitchen and a private household. Readers calibrate your experience from that context before they read a single bullet.

Start every bullet with a verb (ran, cut, built, trained) and put the number at the end where it lands hardest.
Sous chef resume template, line by line
Use this skeleton for each role: Title, Venue (seats, concept), City, Dates. Then one bullet for service scale, one for people, one for cost, one for standards, and one for something you created. Five bullets per current role, three for the previous one, two for older ones. The same template works as a sous chef resume example for any cuisine: only the nouns change.
Common errors to avoid: starting with ‘Responsible for’, mixing tenses, listing every station you have ever touched, and using percentages without a base. ‘Cut waste 18%’ is better than ‘cut waste a lot’, but ‘cut weekly waste from 11% to 9% of purchases’ is better still.
Moving from line cook to sous chef on paper
You do not need the title to claim the work. A hiring chef is asking: has this cook already done sous work? Show it.
- Name the tasks you took on. Ordering, scheduling, opening or closing, running the pass, training. ‘Handled weekly dry goods ordering’ is a sous task even if your title says ‘lead line cook’.
- Show breadth. Working three or more stations proves you can cover callouts. List them.
- Use scale. ‘160-seat bistro, 14-person line, 200 covers on Saturdays’ sets the level.

- Include a ‘covered the sous’ line. ‘Filled in for the sous chef for 4 months during a vacancy’ is the single most convincing sentence a line cook can write.

Short example bullets for the jump
- Opened and closed the kitchen for 40+ shifts, handling cash-out of the walk-in count and the next-day prep list.

Put the strongest of these in the first two bullets of your latest role. The reader should see sous-level work before they see your line station.
Moving from sous chef to chef de cuisine
To move up, the resume has to shift from execution to ownership. Chefs and owners look for four changes.
- From tasks to results. Replace ‘ran dinner service’ with ‘held 29% food cost on $3.1M in annual sales while running dinner service’.
- Menu authorship. Show dishes you created, costed and sold, with plate counts or margin.
- Hiring and firing. Add the number of people you hired, trained and promoted, and one example of managing a difficult situation.
- Vendor and budget contact. Name suppliers you managed and savings you secured.
